Swedish Pancakes

What's Mark's blog missing? Why, recipes!

Swedish Pancakes
My friend Stina sent me this recipe entirely in Swedish. I have translated it for those of you who failed Swedish 101 in high school. (You're welcome.) Makes 4 servings or so. These keep well in the fridge and reheat in the microwave well.

Ingreds
4 eggs
2 dl (200 ml) milk
2 dl (200 ml) flour
½ tsp salt
another 2 dl (200 ml) milk
2 T butter or margarine, melted

Topping Options
Heavy whipping cream (to make whipped cream, traditional)
Sugar (for the whipping cream)
Fruit, berries (traditional)
Jams or preserves (acceptable)
Pure maple syrup (abnormal, but yummy, so who cares?)

What to Do
Gather all ingreds and think, "The Swedes don't usually eat these for breakfast. They have them for dinner, with yellow split pea soup, actually."

Measure ingreds. In a bowl blend the eggs, first portion of milk, flour, and salt. Wisk until smooth and add the remaining milk and butter. Blend. Let sit for a few moments so the flour can "swell." (I have no idea what this means, frankly.)

While the batter is swelling, email Mark. No, really. I did.

In a skillet over medium-high heat, heat some butter. Pour 1 dl (100 ml) of the batter in the pan and cook until the edges are firm. Quickly flip over and cook until firm.

While the pancakes are cooking, start whipping the cream with a wisk, add a bit of sugar to keep it from becoming butter (add a bit of salt if you want it to become butter). Add sugar to taste (optional) and beat the cream to soft peaks.

When pancakes are done, serve hot with whipped cream and fruit.

And who was falling in love with Beau, you or Rufus? Oh, Rufus, I see now. Sure. Whatev. :P

He pays attention to me, too. He escorts me, too.

John(ny) likes him; he let John(ny) smoke some of his cigars.

Rufus/Rosco likes him; he brings Rufus/Rosco homegrown catnip, buys him Pounce, and feeds him cream.

I asked how he was going to bribe you into liking him, and he said that he'd get along with you no matter what. Hmmm...

So he's trying to kill your brother slowly, and he's plying your cat with drugs to sedate him. Sounds like a real winner :P

I must admit, I may be a little tougher than that.

That said, I'm still pretty easy!
